Tasting
Intense straw colour with fine perlage.
On the nose, white flowers and yellow fruit followed by hints of bread crust and a hint of white liquorice. On the palate, a decisive yet very fine bubble, pleasant freshness with distinct saline notes that make it quite unique.
Vinification

Vinification without skins, traditional slow pressing in a vertical press. Fermentation in stainless steel vats at a controlled temperature with indigenous yeasts.
Start of refermentation in the spring following the grape harvest, permanence on the lees
for at least 24 months before degorgement. Traditional hand riddling (remuage) on pupitres.
Label
The label is taken from one of the sketches by Silvio Gordini, great-great-grandfather of Aldo and Paolo, a famous Romagna painter of the early 1900s. The sketch is probably a preparatory study for the wall decoration of a private house. It depicts a winged fair composed of allegorical floral motifs. The sinuosity of the shapes and the vivacity of the colours fully represent a fresh, decisive but very fine wine like Vindice.
This Classic Method pas dosé takes its name from one of the racehorses in the stable of Aldo and Paolo Rametta’s maternal grandfather. A great champion, lively and astute and elegant, remembered with much affection by the family.
