White wine from overripe grapes obtained from the late harvest of Albana produced in Brisighella and Castrocaro Terme, between 200 and 300m above sea level.

Tasting

Intense golden yellow, the nose is persuasive with pear and baked apple, herbs given by resin and dried officinal grass, juniper berries, good balsamic note. In the mouth, the palate is very elegant, the fruit on the nose is also reconfirmed on the palate, revealing a very fresh drink.

Vinification
notes

Grape crushing without skins and fermentation in separate barriques of the each harvest.
Ageing: 8 months in barriques on the fine lees and at least 12 in the bottles.

Label

The image on the Dulcinea label refers to an allegory by Silvio Gordini depicting an upside-down bunch of ripe fruit, yellow fruit and red grapes with sensations of sweetness, and the warm colours of nature refer to the sensations of overripe wine.

Dulcinea takes its name from a racing horse from grandfather Rametta’s stable. Since her birth she immediately excelled for her docility and fidelity, she was very intelligent, graceful and meek, and won several horse racing prizes.
